You know how sometimes you just need cake right now? But you don’t have one to hand and it’s ten to eleven at night which is definitely not bake o’clock. Well no need to worry, I’ve got your back. Not only are there 4 AMAZING cakes in this post, they all only take 1 minute to cook in the microwave. No, that’s not a typo – 1 MINUTE IN THE MICROWAVE! But wait… there’s more…

 

We want to have our cake AND eat it AND feel good about it because we’ve been soooo good all day and we don’t want to undo all the hard work (or maybe the problem is that we haven’t been good at all!). That’s why these cakes are balanced and healthy enough that you could have them for breakfast. And no, I’m not talking about the kind of breakfast reserved for mornings you wake up with the taste of last night’s alcohol on your breath. I’m talking about 6am run, bouncing into work kind of breakfast! By my standards anyway!

 

A note on sweetness: I prefer my mugcakes less sweet so you may need to adjust the sweetener quantities to your preference.

 

So, without further ado…

 

 

 

 

Banana, Maple & Cinnamon

 

Vegan, Gluten Free, Contains Nuts

 

This is a gorgeous, sticky, delicious banana bread-like cake feels soooo indulgent. Coming in at around 250 calories, it has a good balance of fibre (9g if using coconut flour!), protein, and healthy fats.

 

Serves: 1

Prep Time: 2 mins

Cook Time: 1 mins

 

 

Ingredients

  • 1/2 large, ripe Banana
  • 5 tbsp coconut flour or almond meal
  • 1 tbsp nut butter (I love almond with this)
  • 2-4 tbsp milk of choice (should be consistency of cake batter)
  • ½ tsp cinnamon
  • 1 tsp maple syrup
  • 1 tsp natural sweetener of choice (I used a stevia/erythritol mix)
  • 3 pecans, crushed (or nut of choice)

 

Directions

 

  1. Mash the banana thoroughly, then combine with the other ingredients.
  2. Grease a mug, ramekin or other small, microwave safe dish.
  3. Tip the mixture into the dish then microwave high for 1 minute.
  4. Enjoy!

 

 

 

 

 

Strawberry Vanilla Muffin

 

Vegan, Gluten Free, Nut Free

 

This makes a delectably light & fluffy sponge cake. At under 100 calories it really is a light snack although the portion is huge! But with 7g of fibre (using coconut flour) and 11g of protein it doesn’t slack on nutrition!

 

Serves: 1

Prep Time: 2 mins

Cook Time: 1 mins

 

 

Ingredients

  • 1 tbsp vanilla protein powder
  • 5 tbsp coconut flour
  • ½ tsp baking powder
  • pinch of salt
  • 1/8 cup milk of choice
  • 1/8 cup natural, granulated sweetened (I used a stevia/erythritol mix)
  • 2 large strawberries (plus extra for serving)

 

 

Directions

 

  1. Grease a mug, ramekin or small microwave safe dish with butter or oil.
  2. Mix all dry ingredients together, then combine with the wet ingredients. Pour into the microwave dish.
  3. Microwave high for 1 minute.

 

 

 

 

 

Apple Muffin with Spiced Drizzle

 

 

This crumbly, moist apple cake is to die for! The sweet, spiced drizzle feels so indulgent and adds some protein to the Mix. This little muffin come in with just over 200 calories, a whopping 10g of fibre, 8g of protein. It’s my personal favourite.

 

 

Serves: 1

Prep Time: 2 mins

Cook Time: 1 mins

 

 

Ingredients

  • 5 tbsp coconut flour
  • 1 medium egg
  • 3 tbsp unsweetened apple puree
  • ½ tsp baking powder
  • pinch of salt
  • 2 tbsp milk of choice
  • 2 tsp maple syrup
  • 1 tsp natural sweetener of choice (optional – I omit but prefer less sweet)

 

For Drizzle:

  • 1 tbsp vanilla protein powder
  • 2 tsp milk of choice
  • ¼ tsp cinnamon/ginger/nutmeg

 

Directions

 

  1. Combine all of the cake ingredients and mix well. Pour into a greased mug/ramekin/small microwave dish.
  2. Microwave on high for 1 minute.
  3. Meanwhile, combine the drizzle ingredients separately ready to drizzle over your cake when it’s done!

 

 

 

 

Rich Chocolate Mug Cake

 

This post just wouldn’t be complete without a chocolate recipe now would it? This is a rich, moist and crumbly mug cake comes it at under 150 calories, 8 grams of fiber, 7 grams of fat and 10 g of protein.

 

In case you were wondering, I would absolutely have this for breakfast!

Cook Time: 1 mins

 

 

Ingredients

  • 5 tbsp coconut flour
  • 1 tbsp cacao powder/unsweetened cocoa powder
  • ½ tsp baking powder
  • pinch of salt
  • 1 medium egg
  • 1 tbsp unsweetened apple puree
  • 3 tbsp milk of choice
  • 1 tbsp natural, granulated sweetened (I used a stevia/erythritol mix)
  • 1 tbsp dark chocolate chips (optional)

 

Directions

 

  1. Grease a mug, ramekin or small microwave safe dish with butter or oil.
  2. Mix all the ingredients together then transfer to greased dish.
  3. Microwave on high for 1 minute.
  4. Dive in!
